Sustainability
Fruit comes in from the groves; oil leaves as bottles, tins and bulk; crates and drums come back around to be used again. One system, drawn the way we print it.

Built with care, run with intention
Not a statement — just how the mill runs, shaped by patience, resourcefulness, and the landscape we are part of.
- The extraction
Cold — below 27 °C from crusher to separator.
- What is left over
Pomace and pits are sold on to a pomace works in Boeotia, for pomace oil and fuel pellets.
- The machinery
Runs on natural gas throughout the mill.
We work with what the land gives — nothing more, nothing less.
Where the pomace goes
Milling leaves more behind than oil — the pomace: crushed flesh, skins and pits. Ours does not stay at the mill. It goes on to Elaiourgiki Voiotias, a pomace works here in Boeotia that has processed what the region's mills leave behind since 1986.
There the pomace is worked once more: the oil still held in it is recovered as pomace oil, and the dried remainder is pressed into pellets and sold on as fuel. What our milling leaves behind goes back out to be used again.
